Such southern comfort in these apple pie cookies. Tastes just like homemade apple pie which makes it all the better! This week has been all about southern comfort! We got a delicious soup recipe, and now we’re ready for dessert! Well, my friends, we’ve hit the motherload on these cookies! When I tell you it’s a slice of heavenly apple pie in a cookie. This is EXACTLY what it is. I don’t normally make pies. It’s not my go-to dessert to make, even in the fall. But when I decided to make these cookies, I knew I was on to something big! A new generation of pie cookies is to come! I can see it now! The question is, which pie to do next?! If you don’t want to make cookies and want the whole classic apple pie recipe – I got you covered! Ok! Ok! So I totally got off-topic, but seriously when you try these, you’ll be hopping back on here looking for more recipes to try too! I love the way the caramel gives it just an extra hint of melt in your mouth goodness. Add in some cinnamon deliciousness and you got yourself a sweet southern comfort homemade apple pie cookie. I usually make my own caramel but if you want to “cheat” as I did, you can use Smucker’s caramel sundae topping. DEE-LICIOUS! Ok, ok, I won’t make you wait any longer for this cookie recipe! If you are not making the caramel, then you’ll first start with the apples. Peel the apples and then dice them into small chunks. Put them into a medium size pot. Add corn starch, ground cinnamon, water, and salt. Let simmer for 5-10minutes. Allow the filling to cool before using for the cookies. If you try to put filling on while still warm, the crust will NOT like you. It will become just like an uncooperate two year old and they will turn out looking nothing like cookies! Trust me. On a baking mat, or a cookie sheet lined with parchment paper, roll out one of the two pie crusts. Apply a thin layer of caramel to the crust, covering almost all the way to the edge of the crust. You don’t need a lot, only a small coating. After, add apple filling on top. Don’t over fill and try to keep it even and flat. ( It’s looking like a pizza here which makes me want to try to make a apple pie pizza. Should I give it a go?) Next, roll out the other crust on the mat and using a pizza cutter, make even lines (strips) about 1/2 inch wide. The easiest way to do the lattice work: TADA!!! Look at you! You’re a pro! Now add some cinnamon sugar on top and brush with some egg wash. The egg wash will give brown the top of the pie for a nice flaky finish. I prefer to bake the whole pie like this in the oven first before cutting them into cookies. I find they are more stable to cut them and stay together more than cutting them before cooking. You’ll have leftovers pie cookie crust either way. Might as well bake it and then enjoy the craps afterwards. 🙂 Let the pie cool for a few minutes before trying to cut them into cookies. This batch makes about 12 cookies and some scraps for your enjoyment. The filling however is enough for at least two or more batches. Use it on toast, or oatmeal or just scoop it out the jar. You can also put it in a blender and turn it into apple sauce. There are many options! Also, try an easy no-bake dessert, like chocolate chip cookie dip! These apple pie cookies are a delicious alternative for southern comfort goodness. The warm homemade cinnamon apple filling baked into a crispy crust. A delicious piece of pie in a cookie. Peel, dice and core the apple. Add in lemon juice to coat them and set aside. In a medium saucepan, add water, sugar, cornstarch, cinnamon, nutmeg and salt. Stir together. Over medium heat, continue stirring frequently until it comes to a boil. Add in apples, turn to a simmer, and cover. Keep stirring often, until the apples soften, about 5-10 minutes. Allow to cool before using in cookies. Heat oven to 350F. Line cookie sheet with parchment paper. or use baking mat. On a baking mat or cookie sheet, add a light dusting of flour. Roll out pie crust on mat. A thin coating of caramel sauce to the crust. Add thin layer of apple filling on top. On a separate mat, dust with flour and roll out the other pie crust. Using a pizza cutter, cut pie crust into thin strips Start by making a cross in the middle of the pie. Then add a strip vertical to each side of the first strip. Alternate the strips over and under. Then do the same for horizontal. Add one strip to each side of the horizontal line and weave them in and out. Keep repeating this process until you've covered the whole pie. Brust with egg wash and sprinkles top with cinnamon sugar. Bake in the oven for 20-25 minutes. Allow to cool for 5-10 min before using circle cookie cutter to make them into cookies. Try to put circles as close as you can to get the most cookies. Makes about 12 cookies. Don't forget to eat the delicious scraps. **You can slice or dice your apples, I just find diced worked better with the cookies. ** **I used a baking mat that can go into the oven.
