The best baked chicken meatballs that requires just one bowl and a handful of ingredients. Serve as an appetizer, on top salad, or as the protein for dinner. The options are endless! If you’ve never tasted a chicken meatball, then you need to stop what you’re doing and run to the store and get what you need to make these delicious chicken meatballs. Honestly, you’ll probably have most things on hand because this recipe is simple and made with basic ingredients. The only thing you might be missing the ground chicken. This wonderful baked chicken meatball recipe happened on a whim. Well really on accident. I thought I bought ground turkey but came home with ground chicken. So the ground turkey for tacos became healthy baked chicken meatballs and I have zero regrets! It’s now our all-time favorite meatball and I want to spread the word far and wide! Literally, I always have some of these meatballs on hand. They store fantastic in the freezer already cooked. So quick and easy to add to any meal. Of course we still over traditional meatballs with spaghetti but this meatball recipe has become our go-to recipe because it is that good and can be whipped up in a pinch. Making chicken meatballs is easy peasy lemon squeezy. It’s a one-bowl recipe and that’s my kind of recipe. Preheat the oven to 400F. Line the baking pan with parchment paper and set aside. In a large bowl, mix together all the ingredients. I find this is best using your hands just like any good meatball recipe. Once all the ingredients are thoroughly mixed together, start rolling 1-2 inch balls and placing them on your lined baking sheet. Bake for 20-25 mins and then serve! You can serve these like a traditional meatball in spaghetti, or with spaghetti squash and zoodles as a healthier version. I love them on top of a salad, but they work great as a pizza topping, or meatball sandwich! They are also the perfect appetizer for a party! Just pop a pretzel stick or toothpick in them and voila! The main way we eat them is right alongside a nice helping of mashed potatoes ( or pasta) and a veggie. These are quick and easy to make which is perfect for meal prepping. They can be stored in the fridge in an air-tight container for up to 5 days or you can freeze them in a freezer bag for up to 3 months. (If they last that long!) These chicken meatballs reheat beautifully but you can also store them uncooked in the freezer to bake at a later time, (but I recommend cooking them before, it makes meals later so much quicker). I usually double the recipe so I can have some now and freeze some for later. It’s a win-win! These baked chicken meatballs are tender and juicy and so easy to make. Serve them for dinner or bring them as appetizer to a party! Preheat oven to 400F. Line pan with parchment paper. Mix together all ingredients until thoroughly combined.
