Bananas and chocolate are one of the best combinations. Add it to a muffin and you have the most comforting delicious breakfast yet! Banana Chocolate Chip muffins are the perfect switch up from the traditional breakfast. I mean who doesn’t love chocolate for breakfast?! As all these ideas of new recipes swirl in my head, this banana chocolate muffin recipe was at the forefront of recipes to make first! My husband and I love bananas, but we tend to go through phases in our house. Some weeks we can’t keep bananas in stock and other times they sit way longer than we like and are ready for the trash. But I hate wasting food and as bananas ripen, the more nutritious they are for you. Ripe bananas are also just perfect for some delicious recipes! Banana bread is a favorite in our house and is perfect for using up those ripe bananas, but I could always use another recipe to add to the mix! You can certainly use bananas before they are turning brown, but the best results happen when they have brown spots. These banana chocolate chip muffins make a great breakfast on the go, snack, or even dessert. The bits of chocolate chips mixed with the banana flavor hits that sweet tooth just right. Are you ready for a super easy and delicious breakfast muffin recipe?! Let’s start by preheating the oven to 350F. Line or lightly grease the cupcake pan and set aside. In a small bowl, mash up 1 cup of ripe bananas. The riper the better as it provides more flavor and nutrients. This will be about 2-3 medium bananas. Now pull out a large bowl to mix everything together. Start by adding in the mashed bananas, vanilla extract, and both sugars, and oil. Mix together until combined. Next, let’s add in our eggs. We don’t want to overmix them in, just until they are fully incorporated. Now, it’s time to add in our dry ingredients. Start by only adding in half the flour, and all the baking powder and salt. Mix it together and then add the last half of the flour. Lastly, fold in the chocolate chips. Scoop batter into the baking tin and bake for 20-24 mins until the toothpick comes out clean. Banana Chocolate Chip muffins are one of the best ways to use up ripen bananas. Add in chocolate chips for a dreamy combination to serve up for breakfast. Preheat oven to 350F. Grease muffin pan or add cupcake liners and set aside. In a small bowl, mash up 1 cup of ripe bananas. In a large bowl, add in oil, mashed bananas, both sugars, and vanilla. Mix together until combined. Add in eggs. Mix until combined. (don't overmix.) Next, add in half the flour, salt and baking powder. Mix until almost combined and then add in the rest of the flour.
