Banana Split Cupcakes

Banana split cupcakes are surely a special treat! Starts with a moist banana cupcake topped with fresh strawberry buttercream, chocolate ganache, sprinkles, whipped cream and a cherry. I remember always wanting to get a banana split when I was younger, but I learned quickly that my eyes were always bigger than my stomach and could never finish it. So I was only allowed to share it with others and I think these are the only ways you eat these cupcakes too! Imagine all the swirls of a banana split flavors wrapped up in a delicious cupcake! This cupcake is a definite showstopper and drool worthy. Made with fresh fruits like bananas and strawberries to give it that authentic flavor of a true banana split. The banana cupcake is similiar to a banana muffin with its moist and delicious flavor. Personally I love banana bread, so the idea to make a banana cupcake with fresh bananas was at the top of the list. Like banana bread, the bananas keep it moist and provide a great flavor. The brown sugar really deepens the flavors. I could eat this banana cupcakes on their own, but all the flavors together are worth the wait! The strawberry frosting is smooth and creamy with bursts of strawberry flavor. I have used this buttercream many times and each time, it never lets me down. I think just like the banana cupcake, using real fresh fruits really make all the difference. The strawberry puree is so easy to make and only 2 ingredients, strawberries and sugar. Just add both to a saucepan and cook until the sugar is dissolved and the strawberries have cooked down. Whipping up this buttercream doesn’t take long but gosh! It is SO GOOD! Topped the buttercream with chocolate ganache to add a perfect chocolatey sweetness. Ganaches make everything better and no banana split can be made without chocolate! Of course adding store bought whipped cream will suit you just as well. But since we are going all fresh… fresh homemade whipped cream is the way to go! Next issssss SPRINKLES!!! Sprinkles make everything better! They just add some bright color that can make anyone smile. Last, a maraschino cherry to complete the look. You can also add nuts if you love them on your banana split as well. Might I suggest crushed walnuts? Now, you that you’ve been oh so patient with assembly. I give you full permission to DEVOUR them! 🙂 If you plan on assembling the cupcakes a different day, just simply place the muffins in an airtight container. Keep frosting, ganache, and whipped cream also in an airtight container. Store in the fridge to keep fresh longer. Allow frosting to sit a few minutes on the counter before using. Stir both the buttercream and whip cream to remove crusting. Store all for up to 5 days. If you are storing cupcakes already assembled. They can sit out a room temperature for a few hours. If they are sitting overnight, I recommend an airtight container. Store up to 5 days but they never last that long 😉 Banana split cupcakes are a classic favorite treat but in the form of a cupcake! All the fresh flavors of chocolate, banana and strawberry in a delicious little cupcake. Heat oven to 350F. Grease muffin pan or line with silicone cupcake liners and set aside. In a medium mixing bowl, add dry ingredients together and stir. (flour, baking soda, baking powder, nutmeg, ground cinnamon, salt). Set aside. In a large bowl, cream butter and both sugars together until smooth. Add in mashed over-ripe bananas. Beat until smooth. Add in eggs one at time combining completely. Then add vanilla extract. Slowly add dry to wet ingredients. Mix until incorporated, but don’t overmix. Fill prepared muffin cups until 3/4 full. Bake for 18-20 minutes until toothpick comes out clean. Allow to cool for a few minutes before transferring onto a wire rack to cool completely. To make strawberry puree: In a small saucepan, mix 1/3 sugar and 1 cup chopped strawberries together. Cook them down until sugar is dissolved and strawberries are soft/falling apart. Place in blender and puree until smooth. Set aside to cool. In a large mixing bowl, beat butter until smooth. Slowly add powdered sugar, one cup at a time. Add 3 tbsp strawberry puree after 2 cups of powdered sugar. Add the rest of the powdered sugar and strawberry puree and mix completely. Add heavy whipping cream 1 tbsp at a time until desired consistency is reached. Heat heavy whipping cream until bubbles. Remove from heat and add chocolate chips. Stir until smooth. Allow to cool. In a medium bowl, add sugar and whipping cream. Beat until stiff peaks form. **Put bowl and beaters in freezer for 10-15 minutes before making whipped cream will sped up the process for turning the cream into stiff peaks** Need more delicious recipes?
