These blueberry baked oatmeal cups are the perfect breakfast to make ahead and eat on the go, or even a snack. They are an easy and healthy and the perfect way to start your day! Blueberries are definitely one of my favorite fruits. There are very healthy, nutritious and full of antioxidants. Which makes it my first choice for these baked oatmeal cups. However, they are easy to switch up by adding different fruits like strawberries, apples, peaches, or even chocolate chips. They are easy to make and you can whip them up in 30 mins or less. You can make a bunch ahead of time and freeze them for later. They reheat beautifully. I definitely have a love-hate relationship with meal-prep. It’s great once it’s done because it’s done. It simplifies my life from then on. I don’t have to think about making great choices to fuel my body, especially in the mornings when my brain barely functions anyway. I am a last-minute person so if I have to choose between sleep and food. My foggy brain will choose to sleep every time. This is why I love to meal-prep breakfast. The problem is I never know what to meal-prep and having to choose makes me procrastinate even more. This is why I love creating easy breakfast recipes and adding them to my collection and now you can have the collection too! These ingredients are usually staples in most homes and fairly inexpensive to get making this an amazing recipe to whip up at any time. All you need is about 30 minutes and you have breakfast for the whole week. These baked oatmeal cups are so versatile in the fact that you can switch out the ingredients to things you love. Don’t like blueberries? – Try them with other fruits such as apples, strawberries, peaches, or bananas. No fruit on hand? try some chocolate chips. (I prefer the mini chocolate chip morsels for these- for bits of chocolate in every bite!) Want to add a little crunch? – Try add some of your favorite crushed up nuts like walnuts or almonds. Milk Options– You can use your favorite milk of choice whether it’s fat-free, almond milk, coconut milk, or soy milk. No maple syrup? – Substitute honey. It’s just as delicious! The recipe makes 12 cups but you can double the recipe to feed your whole family for the week or you can freeze them to eat at a later time. They last about a week in the fridge in an airtight container or Ziploc bag. In the freezer, I prefer to use a freezer Ziploc bag to store them for up to 6 months or you could an airtight container as well. To eat them, simply place them in the fridge overnight to thaw or gently reheat in the microwave. A quick healthy on the go breakfast that you can make ahead of time to have all week. They are gluten free and easy to meal prep making this your go to breakfast. Pre-heat oven to 350F. Use cupcake liners or grease your pan and set aside. In a medium bowl, add dry ingredients. (oats, brown sugar, ground cinnamon, baking powder, salt) whisk to combine. Add milk, eggs, maple syrup, and vanilla extract and whisk or stir to combine. Add blueberries. Be gentle when stirring or whisking until mixed. Bake for 22-27 minutes until toothpick comes out clean. These freeze well and reheat beautifully so you can make them in bulk. .
