I know what you’re thinking…. BACON??? Well trust me, it’s good. Its a nice balance of sweet with a little pinch of salty which is perfect for a cookie. It evens out all the sweetness. Honestly, I never really cook bacon, but I LOVE to eat it. It’s the one item I always look forward to while out eating breakfast. My husband doesn’t even question me anyone with my crazy recipes, but when one turns out delicious, one must celebrate! [Insert happy dance] and share it with you! I’ve been on a kick with experimenting and concocting all sorts of things but especially with cookies! These great experiments have led to my caramel apple pie cookies, chocolate caramel pretzel cookies and my chocolate chip dip. So I’m really excited to add these to the evergrowing list. I’ve tweaked this recipe a few times to make sure it was a good balance. I tried it with regular thin cut back and it just didn’t give enough of a bacon vibe. I decied to switch to thick cut and it was defintiely the ticket to making the bacon flavor pop. This is my favorite chocolate chip cookie recipe with a touch of brown sugar and bacon twirled in the cookie. Candied bacon is the so ideal in many ways. For one, it’s great to just eat by itself. Two, it allows the bacon to provide a bit of salty without being overpowering. These cookies are chewy, sweet, and have a touch of salty which provides a perfect balance in this dessert. Once you have one, you might have trouble sharing them with the rest of your family! Absolutely you can make these cookies in advance. It works best having fresh cookies. The cookies baked can last about 5 days for freshness, but you can alway make the dough ahead of time and then bake the day of. Yes. You can freeze the dough for up to 3 months in an airtight container. A soft chocolate chip cookie with candied smoky bacon mixed in for a delicious balance of salty and sweet. Heat oven to 350F. On a pan, covered in foil and sprayed with cooking spray. Lay bacon on the pan. Sprinkle brown sugar on top of the bacon. Bake bacon in oven for 20 minutes or until crispy. Flip the bacon over after 10 minutes (halfway through). Allow to cool a few minutes before chopping into pieces. In a bowl, add melted butter and both sugars to the bowl and mix together until all incorporated. Add in eggs one at a time and beat together. Then add vanilla extract and salt Dissolve baking soda in hot water and then add to batter along with baking powder. Add flour in one cup at a time and mix until combined. Stir in bacon pieces and chocolate chips. Make sure bacon is cooled before adding Oven should still be preheated to 350F. Line baking pan with parchment paper. Scoop 1- 1 1/2 tbsp of dough onto parchment paper. Bake for 8-10 minutes. Brown sugar for bacon is an estimate as I just did enough to cover my strips of bacon. GET. IN. MY. BELLY. Goodness! Trying this tonight, but I guessed on the number of eggs. I guessed 2 (based on the Tollhouse Chocolate Chip Cookie recipe). Also guessed on the salt. Fingers crossed they turn out!
