These carrot cake whoopie pies are all the flavors of a carrot cake in a cookie. These whoopie pies are filled with carrots, oatmeal, and a few raisins sandwiched around a tasty cream cheese frosting. Carrot cake has a special love in my household. By special love, I mean it’s my dad’s favorite. He LOVES carrot cake and because it reminds me of him, it will always feel so comforting to eat. Even though carrot cake is his favorite, he doesn’t get it often. (boo!) My mother likes to make it usually for his birthday or Father’s day. But I feel this man needs to praised for more than just 1-2 days a year. After all, he survived living in a house full of women. How could I not treat him to something delicious every now and then! He likes to joke that carrot cake is really healthy because it has carrots in it. He thinks by saying this, my mother will make it more often. To this day, I don’t think it’s worked on her, but he does have me 😉 , and she does make other yummy desserts. 🙂 I love a good oatmeal cream pie, and these carrot cake sandwiches remind me of those delicious pies. Carrots give this cookie a nice color. They are naturally sweet and provide an extra touch of moisture to an already delectable cookie. I used baby carrots and put them in the food processor but you can also food process pre-packaged carrot matchstixs or grate carrot sticks as well. Then, add in some butter, sugars, oatmeal, flour, baking soda, and vanilla and give it a quick stir. I added a few raisins, but you can also add some walnuts as well or just keep these carrot cake cookies plain. Bake for 10-12 minutes and then allow them to cool a few minutes on the baking pan before transferring to a cooling rack. The cream cheese filling is so easy to make for these whoopie pies. Just a little butter, cream cheese, vanilla and powdered sugar to make this smooth, creamy filling. Taste just like the cream cheese icing on a carrot cake. You can add a 1-3 tablespoons of heavy whipping cream to make it more a whipped consistency. These carrot cake whoopie pies are all the flavors of a carrot cake in a cookie. In a medium size bowl, mix dry ingredients (flour, salt, baking powder, baking soda, oatmeal, ground cinnamon, ground nutmeg) Set aside. In large bowl, mix together slightly melted butter and both sugars (brown and granulated) until smooth. Add eggs one at a time combining ingredients completely. Add in vanilla. Slowly add dry ingredients to wet ingredients until combined. Mix in grated carrots, and then fold in raisins. Place in fridge for 1 hour. Preheat oven to 350F. Line baking pans with parchment paper. Add a tablespoon of dough on baking sheet. Bake for 10-12 mins or until edges start to golden. Cream soft butter and cream cheese. Add in powdered sugar one cup at a time. Add in vanilla. Spoon icing into piping bag. Add frosting into onto bottom of one cookie and add another cookie on top. Enjoy!
