An easy, healthy and flavorful way to make some chicken fajitas! Whip these sheet pan chicken fajitas up in no time. Just cut up chicken and vegetables, add seasonings, dump into the pan and you have a dinner that everyone in the family will love! We love Mexican food in our house. Tortillas are always in stock and we are always down for a taco or two, but those sizzling fajitas pans at restaurants get me every time! These Sheet Pan Chicken Fajitas are a breeze to make and much healthier than what you get in restaurants making this your go-to family meal. I always love a good sheet pan dinner recipe as they are so easy to whip up with minimal dishes. It’s fast, fresh and everything you need in a meal all in one. It doesn’t get much simpler than this chicken fajitas recipe. Preheat oven to 425F. Line the baking pan with foil or parchment paper. Cut up your chicken breast, onions, and peppers into strips or chunks. I used 2 large chicken breasts and cut them into long chunks and then peppers and onions into strips. Dump them into a large gallon-size bag with 2 tbsps of oil. (I love olive oil or avocado oil but you can use any of your choosing). Then it’s time to mix up your chicken fajita seasonings. You can certainly buy the seasoning prepackaged but most likely you have all the seasonings already in your pantry. This simple fajita seasoning will be much healthier without all the extra fillers. This fajita seasoning is made of chili powder, paprika, salt, onion powder, garlic powder, ground cumin and cayenne pepper. Once it is mixed, add it to the gallon-sized bag and give it a good shake to coat all the chicken and vegetables. Once coated, dump it onto the pan and spread it evenly. Bake for 15-20 minutes. It’s that easy. If you would like to warm your tortillas at the same time, just pop them on the tray for the last 5 mins or so.
