These Chocolate Raspberry Sandwich Cookies are made with soft chocolate cookies, fresh raspberry frosting and cute sprinkles for decoration! Simple, yet delicious little treat! Make these for Valentine’s Day? See some of my other delicious recipes! These cookies would make the perfect snacking. Not only are they delicious, but they are also easy to make. My dad is a sweets fanatic. He just loves them and always has something sweet and tasty in the house. His favorite is ice cream but he is certainly not one to turn down a homemade dessert as well. Especially if it involves one of his favorites. Raspberries. Well, really raspberries and fresh cherries are his favorites! Add in some chocolate and he’s in heaven! (which is why I made my Chocolate Covered Cherry Cupcakes). Obviously, I couldn’t celebrate Valentine’s Day without celebrating with my first love, my dad. My first thought was to make Chocolate Raspberry Ice Cream Sandwiches but traveling with ice cream would have been tricky, so I went to the next best thing. He has definitely passed on his love for sweets to me, but really seeing how much he enjoys all my creations only makes it that much sweeter. My hope is that this joy spreads over to your family too. 🙂 The cookie dough is quick to whip up and requires little mixing. You can technically mix with a whisk since it’s a thinner batter, but it creates such a soft, fluffy, cake-like texture cookie. They are very similar to whoopie pies. Speaking of…. have you tried my S’mores Whoopie Pies?!?! Don’t look at the picture if you aren’t ready to make them, they are drool-worthy! These cookie sandwiches aren’t the most romantic dessert for Valentine’s Day but a perfect party dessert for sharing with friends and family. The chocolate and raspberry combination is so delectable, I’m not sure why I haven’t made more desserts with this combination! To scoop the dough into balls on the cookie sheet, you could simply use a tablespoon, or you could pipe it. I used a tablespoon because it’s fairly soft but it is a little sticky. But if you want more perfectly round cookies, I suggest piping them using my Wilton 1A or Ateco 808 ( which is a pastry tip and slightly bigger) measure out the first ball with a tablespoon so I know the right size and then pipe the rest. Be prepared that it’s not like icing that will stay in the bag till you push it out. It is a thinner consistency, so be mindful of that. But it also makes it go really fast! The raspberry frosting is flavored with fresh raspberries made into preserves. It is very simple to do, but if you want to cut out these steps, buying raspberry preserves will do just fine. I added about 6-8 tablespoons of the preserves to my buttercream to give it a nice raspberry flavor. The preserves provide a naturally beautiful pink color too. If you prefer to use shortening, you can for the buttercream, this will lessen the butter flavor and really bring out the raspberry flavoring more. And yes, adding sprinkles is always recommended 🙂 The final cookies are perfectly soft and have such great raspberry and chocolate flavor combination. Because the cookies are softer, the buttercream doesn’t totally squish out of the sides and make a total mess when you bit into the sandwich, which I’m a fan of. These cookies didn’t last long at my house and I hope your family enjoys them too! Raspberry Chocolate Sandwich cookies are made with soft chocolate cookies with a fresh raspberry buttercream sandwich in the middle! Preheat oven to 350F. Line cookie sheet with parchment paper and set aside. In a medium-sized bowl, combine the flour, cocoa and baking powder. Set aside. Cream together sugar and softened butter until fluffy. Add in egg and milk and mix. Next, slowly add the flour mixture and mix well. Using tablespoon or piping tip, spoon or pipe cookies onto parchment paper. Bake for 6-8 minutes and allow to cool for a few minutes before moving to a cooling rack. In a small saucepan, combine raspberries, sugar, lemon juice. Allow to simmer and for the raspberries to start to break apart, stir occasionally. Allow to simmer 8-10 minutes before pouring through a sieve. You should be left with about 1/4 of cup. Allow to cool. Cream softened butter or shortening until fluffy. Add in powdered sugar 1 cup at a time. After two cups add in 3-4 tbsp of raspberry preserves. Then add in rest of powdered sugar, mixing after every cup until smooth. Add in rest of the raspberry preserves to get to your desired preference. Add a pinch of salt. To create cookie sandwiches, find two chocolate cookies about the same size. Pipe icing on one cookie and place the other cookie on top.
