This is one of those cakes that just brings out the “ooohs” – both for the look and the taste. It’s such a rendition of a brownie to put together and serve, and it’s perfect for a special occasion or holiday like Valentine’s Day. When I think of Valentine’s Day, chocolates are always the answer but really chocolate covered strawberries seem to be the top winner these days. They can be romantic, but also are simple enough to share with friends. When you pack all those flavors into a brownie, it takes a new form and combines two of the best flavors – chocolate and strawberry! Who doesn’t love a rich fudgy brownie and then adding a sweet strawberry filling makes it oh so heavenly. They are super simple to make and a crowd pleaser! You can also do different flavors for other holidays, like mint chocolate brownies for Christmas or St. Patrick’s Day! These brownies start with a rich fudgy, chocolate brownie layer. Then spread a nice layer of strawberry buttercream and last, add a smooth chocolate ganache. It’s all the elements of chocolate-covered strawberries in every bite! These chocolate covered strawberry brownies are perfect for making in pinch. I used a strawberry extract, but if you wanted to use fresh strawberries, you can follow my recipes for making fresh strawberries preserves and then use 3-4 tbsp in the strawberry filling instead of the extract. For a more fudgy brownie, don’t overmix. Overmixing can cause more air in the batter giving you more of a cake-like texture. If you are cooking your brownies in a glass dish, take the brownies out before you normally would as the brownies cook in the glass even after it’s out of the oven. To avoid them overcooking or becoming crumbly, either take them out when they are still super soft or put the pan in an ice bath immediately after to stop the brownies from cooking more in the pan. Chocolate covered strawberry brownies are your favorite combination of chocolate and strawberry. Its a fudgy brownies with strawberry filling and chocolate ganache. Its perfect for special occasions like valentines day or just sharing with friends – Bake 350F. Grease a 9 x 13 in pan and set aside. In a medium bowl, cream together butter and sugar until fluffy. Add in eggs and vanilla extract. Set aside. In a small/medium bowl, whisk together flour, cocoa powder, salt, and baking soda. Combine dry ingredients into wet ingredients. Pour batter and spread evenly into pan. Bake 20-25 minutes until toothpick comes out clean. Allow to cool In a medium bowl, cream butter until fluffy. Add in powdered sugar 1 cup at a time. Adding 1 tbsp of milk in between and mixing thoroughly. Add in the second cup and mix and then add milk. Last add strawberry extract and 1 drop of red food coloring. Combine. In a medium bowl, heat heavy whipping cream (microwave about 30 seconds, stove until it starts to simmer). Remove from heat and add in chocolate chips and stir until smooth. Scoop mint layer on top of brownies and smooth. Then add chocolate ganache on top and smooth. Place in fridge for 1 hour or overnight to allow chocolate to set. Need more delicious recipes?
