Healthy Chocolate Zucchini Bread is moist, chocolatey and packed with veggies that you can’t even taste. Seriously, you can’t even taste the zucchini. Any way to add vegetables into my diet and still taste like dessert is a win for me! Chocolate Zucchini Bread is an easy bread that is loaded with zucchini and chocolate chips. This healthy chocolate zucchini bread is made with natural sweeteners and no butter. Date syrup is a great alternative to sugar. A tablespoon of date syrup contains more than twice the potassium, calcium, and magnesium levels of maple syrup or honey, with up to 10 times the antioxidants. Zucchini is almost in season and since I am growing them this year in my garden, I thought I might start experimenting with all things I can make with zucchini starting with this healthy chocolate zucchini bread. I mean, who doesn’t love a healthy dessert that has chocolate and veggie but still taste like dessert? Zucchini has since become a favorite for me. I’ve only used them in savory meals like Creamy Zucchini, Spinach, and Parmesan Orzo and Roasted Vegetable Baked Ziti, but I decided it was time to turn sweet treats a bit more healthy without losing the great taste. This zucchini bread does just that! This healthy chocolate zucchini bread is so easy to make. Most time is in the oven, so you can whipthis up in less than 20 minutes. Preheat oven to 350F. Grease or line 9in x 5in loaf pan and set aside. In a medium bowl, whisk together dry ingredients (flour, cocoa powder, baking powder, baking soda, and salt). Set aside. In a separate (large) bowl, whisk 2 eggs, then add in oil (your choice), date syrup, and unsweetened applesauce. Mix until smooth. Slowly, mix in the dry ingredients into the wet ingredients. Mix 1/2 dry until almost combined and then the other half. Don’t overmix. Stir in the shredded zucchini and chocolate chips until just combined. Pour batter into the prepared pan. Sprinkle chocolate chips over the top of the bread as well if you’d like. Bake for 50-55 minutes, or until a toothpick inserted into the center of the bread comes out mostly clean, you might have some melted chocolate chips on the toothpick and that is fine. You just don’t want a lot of gooey batter. Remove the pan from the oven and set it on a wire cooling rack. Let the bread cool in the pan for 15 minutes. Run a knife around the edges of the bread and carefully remove it from the pan. Let the bread cool on the wire cooling rack until slightly warm. Cut into slices and serve.
