So freaking delicious! A healthy orzo recipe that can be used as a side dish or light main course! Packed full of veggies, this light, flavorful pasta will compliment any meal. Orzo is one of those different kinds of pasta. It likes to play tricks on you and make you think it’s rice by shape, but really it’s an almond-shaped noodle. This healthy orzo recipe takes only 20 minutes to make and so scrumptious! Trying to expand our variety of cooking. I’m all about trying new things and experimenting in my kitchen. It’s always a challenge. My husband is the real trooper trying all my inventions. As with anything practice helps, and although some turn out not so great, most turn out pretty well. But every now and then, you get some that surprise you! This one definitely did! The soft flavors of this dish are just wildly addicting. No one flavor overpowered the other. It was a nice balance of all flavors with lots of veggies and with a light creamy sauce. This orzo pasta is very easy to make and only takes 30 minutes from start to finish! First, you’ll want to cook the orzo pasta in a separate pot as instructed on the package and set aside. While the pasta is cooking, you can start on the sauce. In a medium/large pot, heat olive oil and add diced onions, garlic, bell pepper and zucchini to the pot. Cook till onions become translucent or tender. Add in flour and toss to coat. Cook for 2-3 minutes stirring occasionally. Now add milk to make the sauce creamy. Cook for about 3-4 minutes stirring occasionally until the sauce has thickened. Next, add spinach, lemon juice, and parmesan cheese. (I used shredded parmesan cheese) Stir until cheese is melted, spinach is wilted and everything is combined (approximately 1 minute). Last, add in orzo pot and stir until combined. Add salt and pepper to taste and enjoy! I love this pasta with a fish ( like salmon or tilapia) and some veggies. I have also made it as a side with some meatballs and vegetables. To make it even healthier, use whole wheat orzo pasta instead. If you prefer red sauce over the creamy sauce, you can omit the milk and flour. Instead do 1 cup of your favorite marinara sauce or pesto. You can do any of your favorite vegetables. Instead of zucchini you can try it with broccoli, Brussel sprouts, or even asparagus. To make the pasta your main dish, you can add chunks of chicken to your pasta dish. A delightful pasta side dish loaded with veggies in a light creamy sauce. Only 30 minutes to make this deliciously creamy pasta Cook orzo pasta as instructed. Set aside. In a medium saucepan, heat oil over medium heat. Add in onions, garlic, bell pepper, and zucchini and cook until tender. Add in flour and coat. Cook 2-3 minutes stirring occassionally. Add in milk and cook 3-4 minutes, stirring until thickened. Add in spinach, lemon juice and parmesan. Cook 1 minute. Last, add orzo pasta and mix well. Add salt and pepper to taste. Enjoy!
