All the deliciousness of lasagna flavor without the long hours in the kitchen. Just brown the meat, onion, and garlic and then dump and then go. “Hello, my name is Becky and I have no self-control when it comes to lasagna.” Seriously, it’s so freaking delicious! Almost every Sunday, my adult self goes over to my parent’s house with my husband for a home-cooked meal. It’s the one day of the week our family gets quality time together and I love it, not just for the meal. Last family dinner, my mother made lasagna. I scarfed down 3 huge servings and was going back for a fourth when my mother stepped in like I was 8 years old again and told me in her motherly voice to wait and let my food settle. I wanted to tell my mom, the food is settled and there was still room, but she has taught me manners over the years, so I waited patiently…. for like 5 minutes and then annoyed her like an 8-year-old until she let me go back for more. 🙂 I love making lasagna but at the same time, I needed a recipe that would supply a quick fix without all the time cooking in the kitchen. Now, don’t get me wrong, there is nothing that compares to the real deal slaving in the kitchen for hours lasagna, but this quick simple lasagna casserole gives you a nice taste of lasagna in no time! I love easy recipes and it is no secret that I love to use my slow cooker. This is my crock-pot (with a few awesome upgrades) and it’s my favorite thing in my kitchen! I’m determined to get the message out to all those people who think cooking is hard or never use a crock-pot! They miss out on so much delicious food! So, here’s my quick way to get my lasagna fixed without all the time in the kitchen. I just let the slow cooker do all the work. This lasagna casserole is full of meat, gooey cheese and soft pasta shells sprinkled with all your favorite Italian seasonings. Although the slow cooker does most of the work, it doesn’t do all the work. First, you’ll ground the meat in a skillet. I prefer to use ground turkey and mild Italian sausage without the casing, but you can use ground beef as well. Just brown the meat with garlic and onions. Cook until the onions are translucent. The meat doesn’t have to be cooked all the way through as it will cook more in the crock-pot, but it will be mostly cooked while waiting for the onions to cook. You have the option of cooking the pasta on the stove or you can add in pasta shells and 3 tablespoons of ricotta and one cup of mozzarella in the crock pot. Stir together. (You can certainly add more ricotta if you like, I only like a little in mine). Cook for 45 minutes to a 1 hour more until noodles are tender. When cooking pasta in the crock-pot, it will absorb a lot of the liquid from the sauce. You will want to add water to your casserole if it is too dry or you can add a bigger can of tomato sauce. My crock pot tends to cook quicker than most. When noodles are to your preferred texture, add cheese on top and turn crockpot to warm. Garnish with parsley. Crockpot Lasagna Casserole is the delicious flavor of hours in the kitchen without all the work. Add in sauces and diced tomatoes, and Italian seasoning. Stir well. Cook high 3 hours or low 5-6 hours. Add in pasta shells, ricotta, and 1 cup of mozzarella. Stir well. Cook for another hour or until pasta is tender. Top with cheese and garnish with parsley. I used 2.5 Tbsp of Ricotta just to give it a little flavor. I'm not a big fan of ricotta cheese but believe it's nice in small doses. Now that you had dinner it’s time for dessert!
