Delicious Corn and Black Bean Salsa

How colorful is this delicious homemade salsa? Corn and Black Bean Salsa is fast, fresh, healthy, and delicious. It also happens to be vegan and gluten-free, too. A definite party favorite! One of my friends likes to call it “veggie crack!” It’s so fresh, yet wildly addicting. I love that this salsa can be made with mostly canned vegetables or you can use fresh ones. Of course, fresh is better but you can’t complain with the flavors you get from the canned ones. I prefer to get the canned tomatoes with no added salt and the other veggies in no sauce. This helps to keep everything simple and you can always add more salt at the end! I love how easy this salsa recipe is! Look at all the colors, I’m in LOVE! My mother always says, “the more color, the better!” I like using a purple onion for a more potent onion flavor and color. You can certainly use a yellow or white onion as well. I use both red and green bell peppers. It definitely adds a nice crunch to the salsa and flavor. I love how you can used canned items or fresh tomatoes, corn, and beans if you choose. Of course fresh ingredients for a salsa recipe is always best but the canned ingredients still give you that fresh salsa flavor. The ingredients and seasonings are simple with this tasty salsa. A little minced garlic, some cilantro, a dash of salt, pepper, and some lime juice. The lime juice adds a little flavors but also helps the avocado from turning brown. If you like a little kick, add a jalapeno. If like spice but not a lot, take all the seeds out from the jalapeno before chopping it at adding it to the salsa. The seeds are what provides the extra kick. You can store your salsa in an airtight container until its gone, which is usually in less than 7 days. 🙂 Corn and Black Bean Salsa is fast, fresh, healthy, and delicious. Without trying, it happens to be vegan and gluten-free, too. Perfect for any party or an at home snack. In a large bowl, add all ingredients to the bowl and stir. *I usually add the avocado and pour lime juice over it before stirring to make sure the avocado gets coated to prevent browning.* **Add cilantro last.
