Frosted Lofthouse Sugar Cookies

Soft-cake frosted sugar cookie that are just like the lofthouse sugar cookies you find at the grocery store frosted with a sweet buttercream. Now you can make your own with this lofthouse cookie recipe. I couldn’t resist trying to make these cookies. The LoftHouse Sugar Cookies are irresistable. How does one practice self control while passing the bakery section in the grocery store and you see those delicious little treats staring right back at you??? You make your own and they taste even better than the store bought cookies! They may only taste better because I know exactly what is going into them. I think that makes me feel better knowing the ingredients and no other preservatives. These sugar cookies are soft, moist, very addictive and fluffy. I made them for my niece’s birthday party and they were a hit! I love that you can make these soft sugar cookies for any occassion! I thought these lofthouse sugar cookies were quite tasty, but I know that they may not appeal to everyone, since they do taste a bit different than the lofthouse sugar cookies in the store. They are pretty darn close to the taste for a homemade version and they taste great either way, right?! You really can’t go wrong with these cookies and everyone is sure to love them. I think these were the first cookies to be finished off my of my holiday baking trays. Note: the dough for these sugar cookies is VERY soft to work with, so just be prepared. It’s good to keep the dough you aren’t rolling out at the moment in the refrigerator while you work with the rest of the dough. Store cookies in an airtight container if there are any leftover so they stay soft! Also, keep in mind that the texture of these Lofthouse sugar cookies are more fluffy and cakey than your typical sugar cookie you are used to. A super soft sugar cookie topped with sweet buttercream. A fantastic sugar cookie recipe for any occassion. In a large bowl, beat the butter and sugar on medium-high speed until nice and fluffy. Add egg and egg yolk and beat until incorporated. Add sour cream and vanilla and beat on low, until well combined, scrape down the sides of the bowl to make sure everything is incorporated. In a separate bowl, mix dry ingredients.( flour, cornstarch, baking soda, baking powder, and salt.) Slowly mix dry ingredients to the wet ingredients and mix until combined. Cover the bowl with plastic wrap and refrigerate for at least 1 hour for best results. Preheat oven to 375 degrees F. Line baking sheet with parchment paper. Take a tablespoon of dough at a time and roll dough into round balls. Place them onto parchement paper about 2 inches apart. Flatten evenly with the bottom of a glass or measuring cup. Bake for 9-13 minutes or until the cookies are just starting to turn golden (NOT brown) on the edges. Remove from oven and allow to cool completely on the sheet. Cookies will continue to cook while they cool. Repeat with any remaining dough. Cream butter (and shortening if using) until light and fluffy ( approx, 3 mins). Add salt, vanilla and comibine. Slowly add powdered sugar 2 cup at a time and beat until smooth. Add heavy cream, 1 tablespoon at a time then add the remainder of powdered sugar until desired consistency and taste is reached (you may not need it all) and continue to beat until smooth. Once cookies have cooled completely, frost and add sprinkles, if desired. Allow frosting to set, then store in an air-tight container. Frosting is based on preference. If you want it thicker and to crust over, you’ll add more powdered sugar. If you want it more soft, whipped like, use more heavy cream.
