A festive winter cocktail with flavors of pineapple, rum, and coconut all in a bright blue tropical drink. A fantastic combination of blue hawaiian meets creme de cacao for an delicious cocktail to bring to your next holiday party. I went through a phase in college, where blue hawaiian was the drink to get at the bar. It was bright, fruity, sweet, and perfect for sipping on through the night! I won’t tell if you decide to drink this as a summer cocktail. I’d be lying if I said I was going to this summer. 🙂 All you need for this cocktail is some malibu rum, creme de cacao, pineapple juice, cream of coconut and blue curacao to add some bright blue flavor! Malibu, creme de cacao and cream of coconut is all that goes into this holiday drink. It’s similar to a pina colada but no pineapple juice. Instead we add creme de cacao to make it like a chocolate coconut creamy dream. It was easy to sip this dessert cocktail but not feel overly full like other creamy drinks that are milk based. To make it less sweet, you can use coconut cream. What’s the difference between coconut cream and cream of coconut? Coconut cream is made from shredded coconut and water or milk. It’s similar to coconut milk but has less water making it a thicker consistency. It is used for cooking and has a mild non-sweet taste. If you sweeten coconut cream, you get cream of coconut! This is what is used in pina coladas and other beverages and desserts. I recommended using cream of coconut, but if you find cream of coconut too sweet, you can use coconut cream and add sugar to make the drink your liking. Cream of coconut can be found in grocery stores or liquor stores. Coconut cream can be found in the ethnic section or usually canned next to the coconut milk. You can also get it here. To amplify the coconut flavor, dip the rim in the rum or melted white chocolate and then into shredded coconut: a delicious garnish almost too pretty to eat! Optional, but you won’t regret it. 🙂 Try these frozen as well for an awesome icy treat. Just add the ingredient in a blender with ice and you have a creamy dessert cocktail to drink with friends.
