Ingredients: 6 strips bacon (diced); 3 tbsp butter (unsalted); 1 diced yellow onion (diced); 3 stalks of celery (diced); 1 tsp minced garlic or 1 medium garlic clove* (minced); 1/4 cup flour; 5 lbs potatoes (peeled, diced); 48 oz chicken broth (I used low sodium); 2 cups milk; 1/3 cup heavy whipping cream; 1 tsp salt***; 1 tsp black pepper; 1.5 tsp chili powder; 1 tsp italian seasoning; 1 cup shredded cheese; 4 oz sour cream; 2 green onions (optional )

Loaded Potato Soup

There’s something so comforting about this soup. It maybe my undeniable addiction to anything potato, but I swear it so much more than that! The smooth creamy soup with soft chunks of potato all swimming so perfectly in seasoning, bacon and cheese. It’s right up in my favorites next to the Cozy Wild Rice Soup, Crab and Corn Bisque and Chili!

You know it’s a winner in our house when your husband takes some to work with him. (Does anyone else struggle with their spouse bringing their lunch to work with them too?)

Loaded Potato Soup

This smooth creamy loaded potato soup has soft chunks of potato combined with all the flavors of a loaded baked potato but without all the fat.

Ingredients

6 strips bacon diced

3 tbsp butter unsalted

1 diced yellow onion diced

3 stalks of celery diced

1 tsp minced garlic or 1 medium garlic clove* minced

1/4 cup flour

5 lbs potatoes peeled, diced

48 oz chicken broth I used low sodium

2 cups milk

1/3 cup heavy whipping cream

1 tsp salt***

1 tsp black pepper

1.5 tsp chili powder

1 tsp italian seasoning

1 cup shredded cheese

4 oz sour cream

2 green onions optional

Instructions

Cook bacon and remove from pan. Keep the bacon grease for soup pot.

In soup pot, add onions, celery, and bacon grease and cook down until onion are almost translucent. (about 5 mins)

add in minced garlic and flour. Cook long enough to coat onion, celery and minced garlic (approx. 1 mins).

Add chicken broth, diced potatoes, milk, heavy whipping cream, and seasonings (salt, pepper, chili powder, and italian seasonings). Stir thoroughly together.

Cook until potatoes are tender enough to stick a fork through easily. (about 10-15 mins)*

Take half the potatoes out from pot and use blender to puree them. Add them back to the pot and stir.

add cheese, sour cream, and bacon. **

Serve with additional bacon, cheese or sour cream on top.

Recipe Notes

*I wait for my potatoes to be soft but not quite falling apart. This provides a better consistency*

**I wait 1-2 after adding the bacon and cheese to eat as it lets all the flavors absorb into the soup**

***I used reduced sodium chicken broth avoid too much salt. I added an extra 1/2 tsp at the end . If you used regular chicken broth. I would only add 1 tsp and test taste at the end before adding the other half. ***
