Mint Chocolate Brownies are rich, fudgy chocolate brownie with a creamy mint frosting with smooth chocolate ganache on top. It’s like Andes mint in a brownie. Smooth, decadent and melts in your mouth mint chocolate flavor! Chocolate and mint have always been one of my favorite combinations. You might have noticed my obsession with mint chocolate desserts and drinks like my mint chocolate chip cookies or chocolate peppermint martini! My love for it started as a little kid. My favorite ice cream was mint chocolate chip ice cream. It didn’t matter where I went, mint chocolate was what I would get. It’s cool, refreshing yet sweet. Add in a brownie to the mix and whoa baby, these brownies won’t last long! Although most think to make these for holiday parties like for Christmas or St. Patrick’s day, I find bringing them to any party, you’ll never have leftovers. They will be devoured. It’s just something about having all those salty appetizers and party food that require the cool minty and chocolatey dessert to complete the meal. Plus it leaves your mouth feeling cool and refreshed. Who doesn’t love that?! Now it is important to note that you don’t need to use much peppermint extract to give it that minty flavor you’ll love. You’ll only need a teaspoon. Any more than that and you’ll have it tasting more like toothpaste and no one wants to eat toothpaste. For a more fudgy brownie, don’t overmix. Overmixing can cause more air in the batter giving you more of a cake-like texture. If you are cooking your brownies in a glass dish, take the brownies out before you normally would as the brownies cook in the glass even after it’s out of the oven. To avoid them overcooking or becoming crumbly, either take them out when they are still super soft or put the pan in an ice bath immediately after to stop the brownies from cooking more in the pan. Mint Chocolate Brownie is the best combination of mint to fudge! A fudge brownie with sweet peppermint frosting topped with chocolate ganache. It's the most refreshing dessert for any occasion! Bake 350F. Grease a 9 x 13 in pan and set aside. In a medium bowl, cream together butter and sugar until fluffy. Add in eggs and vanilla extract. Set aside. In a small/medium bowl, whisk together flour, cocoa powder, salt, and baking soda. Combine dry ingredients into wet ingredients. Pour batter and spread evenly into pan. Bake 20-25 minutes until toothpick comes out clean. Allow to cool In a medium bowl, cream butter until fluffy. Add in powdered sugar 1 cup at a time. Adding 1 tbsp of milk in between and mixing thoroughly. Add in the second cup and mix and then add milk. Last add peppermint extract and 1 drop of green food coloring. Combine. In a medium bowl, heat heavy whipping cream (microwave about 30 seconds, stove until it starts to simmer). Remove from heat and add in chocolate chips and stir until smooth. Scoop mint layer on top of brownies and smooth. Then add chocolate ganache on top and smooth. Place in fridge for 1 hour or overnight to allow chocolate to set. Need more delicious recipes?
