Mint Chocolate Chip cookies are made up of peppermint cookie dough, studded with plenty of chocolate chips. It’s your favorite ice cream in cookie form – the perfect summer cookie or great for holidays like Christmas and St. Patrick’s Day with these green tinted mint cookies! Who doesn’t love a good Andes mint. Growing up, my favorite ice cream was mint chocolate chip. Still to this day, it is one of my go to flavors. The creamy minty flavor is just so nice and refreshing. I can’t believe it has taken this long to make a cookie with one of my favorite flavors. This cookie dough looks exactly like mint chocolate chip ice cream. It’s freaking scary how identical they look. Really only can tell the different by the fact the dough isn’t frozen. But the flavors are the same making it a win for me! My first thought as I bit into the cookie was that it has good flavor and nice balance of chocolate with the mint. Then, I ate another and realized that I loved these cookies way more than I initially thought. By the third and fourth cookie, I realized how ridiculously addicting these cookies are and had to leave the house for fear of eating the rest. But at least I would have minty fresh breath! Really you can make these cookies anytime of the year! But personally I think they would make the best St. Patrick’s day dessert. People would be pleasantly surprised by the color and wowed by the flavor. The coloring is not off putting as it reminds me of mint chocolate chip ice cream, so people will love seeing these out on the dessert table! Because these cookies are so refreshing, they will be perfect for all those summer pool parties! A great summer dessert to add to your favorite desserts list to beat the heat! If you just can’t get enough of the peppermint flavor, pair it with mint chocolate chip ice cream for a mint chocolate chip overload! These mint chocolate chip cookies are very easy to make and the pop of green food coloring just make these cookies so fun! I stuck to my original chocolate chip cookie recipe (because why stray from something so delicious?!) First cream the butter and sugars until fluffy and fully combined. Add in the egg and a splash of vanilla extract. Then add in the peppermint extract. This will give the dough a light, overall minty flavor. Now add the dry ingredients of flour, salt, and baking powder. Once that is all combined, add in the drops of food coloring. I added 7 drops of green and mixed with the beaters and then added a few more drops until I reach my desired color. In total, I did 10 drops. If you would like to make these a darker green for St. Patrick’s day, you can add more green food coloring. Lastly, add in a cup of chocolate chip morsels and stir with a spoon. Once I am sure that each cookie will get just the right amount of peppermint and chocolate flavor, I spoon a tablespoon of the cookie dough onto the baking pan lined with parchment paper. Bake at 350F for 10-12 minutes. Allow to cool just a few minutes before transferring to a cooling rack. For best results, chill dough for 2 hours to let all the flavors meddle together. I say this, but personally I just want cookies right away ;P Some people love to make the dough the night before and then bake them the next day. This recipe will work for whatever way strikes your fancy! 🙂 There are many options for storage of these cookies and dough. You can make the cookie dough ahead of time and store it in the fridge for up to 5 days or in the freezer for up to 3 months. Just make sure the dough is stored in an air tight container or freezer bag or both. Label bag with the date ( you know things get lost in the freezer!) and let out as much air as possible. If cookies are already baked, store them in an airtight container, ziplock bag or plate with foil. Fresh baked cookies are good for up to 2 weeks before they start getting hard and crumbly. This light refreshing cookie looks just like mint chocolate chip ice cream and tastes like it too! Preheat oven to 350F and line baking pan with parchment paper. In a large bowl, cream butter and sugars together. Add in egg, vanilla, and peppermint extract. Mix in flour, baking powder, and salt. Add in drops of green food coloring. Add more or less for your desired color. Stir in chocolate chips. Add a tablespoon of cookie dough to baking pan about 2 inches apart from each other. Bake for 10-12 mins. sooooo yummy and look really good i have made them so many times and my friends, family and i have all been so pleased with how they turn out and they are so easy to make. (they get better each time i make them)
