Cookies and cream cake?!?! Umm, yes, please! It’s like two desserts in one, who wouldn’t love that? Oreo cookies in a simple white cake mix with a sweet buttercream mixed with more Oreos and topped with a chocolate ganache. Seriously so delicious! Cookies n cream anything I feel like is a crowd pleaser unless they just don’t like chocolate. ( like how is that possible?!?!) If you’ve spent any time on here, you’d know I’m a cookie fanatic. I love making all different kinds of cookies like ( Caramel Apple Pie, Cinnamon Roll, Mint Chocolate Chip or Candied Bacon Chocolate Chip just to name a few! ) There are not many people you meet that do not like cookies n cream, especially those infamous chocolate cookies with cream filling. That’s right Oreos. It’s America’s favorite cookie and an Oreo cake is any Oreo cookie lovers dream! When my friend came to me asking to make a cake for his girlfriend, I was already excited, because I love baking! I’m just not so excited about it staying in my house because I will eat it all. So I’m always thrilled when I can bake and send it off to a happy home. But when he asked if I could make a cookies n cream cake, I wanted to do a happy dance! Finally, I get to do a cake that wasn’t as much about the look on the outside but about all the yummy goodness on the inside. I was super stoked to take on the challenge. Although this was used as a birthday cake, I’m pretty sure this cake will be perfect for any celebration or occasion. When I thought about it, I was actually quite shocked I haven’t made a cookies n cream cake yet. I mean I love those double stuf cookies. (It’s gotta be the double stuff! Am I right?) I guess when most people think birthday cake they go with chocolate OR vanilla, not a nice in-between flavor like cookies and cream. I was excited for something different yet still a favorite in my book. The cake is packed full of Oreos! Literally, you need a whole package and make sure it’s the family size! Although party size wouldn’t hurt 😉 This Oreo cake is made with a white cake mix mixed with crushed Oreos. Then, a simple white icing is swirled with more crushed Oreos and we add a layer of chocolate ganache in between each layer just for good measure. It’s sweet, creamy, and chocolate just like an Oreo cookie would be… if it were a cake. I kept this recipe simple, as cake mix is the easiest way to go. You will need to crush a good amount of Oreo cookies. I recommend using a food processor for most of it. It helps ground them to tiny bits. I prefer this for the icing but for the cake, I recommend just crushing them in a bag with your hand or rolling pin. I find its better to have thicker bits of cookie crumbs in the cake. Now, Nabisco found a way to make it even more simple to make all your yummy desserts with Oreo crumbs. They now sell Oreos already crushed! (You can get them at your local supermarket) so now all you have to do is dump them in. However, I do recommend getting two bags as one just might not be enough. Besides, I really don’t think you can go wrong with having extras! You can always sprinkle a few cookie crumbs on top! An explosion of Oreos in every bite. This Cookies n Cream Layer Cake is made with crushed up Oreos in simple white cake mix with layers of cookies n cream buttercream and chocolate ganache in between, then topped with a chocolate ganache and Oreos! An Oreo lover's dream! Preheat oven to 350F. Grease 3 8-inch cake pans and set aside. Follow instructions on cake mix box. Follow instructions on cake mix box. In a large Ziploc bag, crushed the Oreos into small pieces using a rolling pin or something similar. Fold the crushed Oreos into the cake batter. Pour batter into cake pans and bake as directed: about 30mins or until toothpick comes out clean. Remove from heat and set aside. Allow cakes to cool. While cakes are cooling, Crush up more Oreos cookies. I used a ninja food processor. this time to grind the Oreos into a fine crumb. After 4 cups add 2-4 tbsp of heavy whipping cream and vanilla extract. In a separate bowl, combine butter and shortening until creamy. Add in powdered sugar 1-2 cups at a time, mixing well in between. Add the remaining cups of powdered sugar and heavy cream until its to the desired consistency. Last add in cookie crumbs. For the ganache, Pour 1 1/2 cups of heavy whipping cream into a bowl and microwave for 30 seconds. Add in chocolate chip morsels and stir until smooth. Place first layer of cake on plate and top with oreo buttercream. Then add a thin layer of chocolate ganache. Next add the second layer of cookies n cream cake and then top with more cookies and cream buttercream and a thin layer of chocolate ganache. Then add the third layer of cake on top. Smooth buttercream around all sides of the cake. Use a piping bag, squeeze bottle or spoon to pour ganache around the edges letting it slightly drip over the sides and then cover the top with chocolate. Cut 5-7 Oreos in half to decorate the top and pipe swirls of buttercream in between. Add the last of the Oreos to the processor and sprinkle around the bottom of the cake or in a ring around the top.
