A delightfully moist bundt cake recipe made with sweet blood oranges and raspberries. A simple show-stopping cake for any party! Are you familiar with blood oranges? I never really had them growing up, and now that I have, I feel so deprived! These oranges are so juicy and delicious! My neighbor down the street has a tree in his backyard and he sells them for 3 for a $1. I’ll take that deal any day! I bought 6 and then went back to buy some more because they were so delicious just to eat by themselves. I did eventually muster up some self-control so I could make this pretty cake. The blood orange is a type of orange that develops a raspberry color flesh instead of the typical orange color. Its peculiar color comes from the presence of anthocyanins which provides an abundance of antioxidants. These blood orange benefits include anti-inflammatory properties to reduce the risk of cancer, bacterial infections, and diabetes. It also helps defend blood vessels losing oxygen and decreases LDL levels of cholesterol. Blood orange season is fairly long, almost half the year from December to May. (high five!) This makes my toes wiggle with excitement! I’m ready to start making more blood orange recipes. This bundt cake recipe is fairly easy to make and will really wow your family and friends. Making a homemade cake from scratch doesn’t have to be hard and I have all the faith that your blood orange cake will come out just as pretty as this bundt cake! The pops of color really provide contrast and flavor in this homemade cake. First, preheat your oven to 350F and grease your 9-inch bundt cake pan. Combine dry ingredients of flour, baking soda, baking powder, and salt. Mix together and set aside. In a large bowl, cream together butter and sugars. You will want your butter to be room temperature or softened but not completed melted. I prefer to use unsalted butter as well. Add in blood orange zest and cream together till fluffy. Next, add in eggs one at time combining completely. Add in vanilla ( I love this one!) and blood orange juice. Alternate combining dry ingredients to the wet ingredients until fully incorporated. Mix in plain greek yogurt or sour cream. At this point your cake batter will be thick. Last, fold in raspberries. Pour/scoop batter into bundt cake pan and bake for 45-55 minutes. To make the glaze, combine confectioners sugar, cream and blood orange juice. Once bundt cake has cooled, spoon glaze in the middle of the cake and let it drizzle down the sides. Garnish with blood oranges and raspberries for a classic southern living cake look! I love to take this cake to parties or just having it for breakfast. I mean, who doesn’t love cake for breakfast?! This blood orange cake pairs very well with a mimosa 🙂 But if you have any blood oranges leftover, a nice blood orange mimosa would be a fabulous way to start brunch! A delightful, dense, moist bundt cake made with sweet blood oranges and raspberries with a blood orange glaze. Heat oven to 350F. Grease 10 in bundt pan and set aside. Whisk the flour, salt, baking powder, and baking soda together. Set aside. In a large bowl, cream butter and both sugars and blood orange zest together until fluffy. Add in eggs one at a time, incorporating each fully. Then add vanilla and blood orange juice. Slowly add in dry ingredients to wet ingredients. Once fully combined, add in sour cream. Last fold in raspberries, gently stirring them into the batter. Batter will be thick. Pour/scoop batter into baking pan. Bake for 45-55 minutes or till toothpick come out clean. Combine confectioners sugar, blood orange juice, and heavy cream. Once cake has cooled, Spoon glaze in the middle of the cake letting it drizzle down the sides.
