This simply delicious egg roll soup is packed full of the flavors you love from an egg roll into a soup. Make it quick and all in one pot for an amazing weeknight meal. If you’ve been following me at all, you’ll know that making my favorite things in a different way is kind of my jam! Like those Caramel Apple Pie Cookies, Candied Bacon Chocolate Chip Cookies, or Fajita Turkey Burgers. They all turned out so delicious and lovely that I can’t help myself but try something new again. I always love a good hearty soup. The kind full of veggies and a little meat to give you a well rounded meal. There’s something just so comforting about soups like this. I’ll be honest, I don’t normally cook with cabbage, but I like cabbage. I also never used ground pork, so I was definitely experimenting when I made this soup. I decided to REALLY go outside of my comfort zone and try something new. When I first started combining these ingredients, I wasn’t sure what I would call this meal. Maybe some kind of cabbage soup, but it just didn’t seem fitting. Then I realized what it tasted like…an egg roll, and BAM! I immediately called my husband to pick up wonton strips from the store because what good is egg roll soup without some wonton? I didn’t think I’d have the knack for making any Asian cuisines. But after making this soup, I’m actually excited to try making some more Asian recipes! This egg roll soup is so simple and tasty. I was surprised at how easy it was to make this flavorful soup. Keeping it simple but bursting with flavor is the name of my game and I’m happy to report, it passed the test! Packed full vegetables like cabbage and carrots, with chunks of ground pork in a simple broth makes this a winner in my book! This soup is can be made to fit your own taste! Add in any meat you’d prefer or go vegan and keep it meatless. I also wrote the garnishes were optional but I really think they make the meal. It just brings it all together to say, hellloooooo egg roll deliciousness. I also love that there are only 10 ingredients and one pot to make this soup recipe. It only takes about 35 minutes which is a plus in my book. It puts it high on the list for a weeknight meal. Soup Pot Slotted Spatula Soup Ladle This simply delicious egg roll soup is packed full of the flavors you love from an egg roll into a soup. Make it quick and all in one pot for an amazing weeknight meal. In a medium pot, add olive oil and ground pork. Cook pork on medium heat until brown. Stirring occasionally. Use a slotted spatula or spoon to transfer the pork to a separate small bowl, and set aside. Add onion and carrots to the leftover olive oil and juice in the pan, and stir to combine. Sauté for 5 minutes, stirring occasionally. Add garlic, and sauté for 2 more minutes, stirring occasionally. Add the cabbage, stock, soy sauce, ground ginger and cooked pork, and stir to combine. Continue cooking until the soup reaches a simmer. Stir in pepper and water, then reduce heat to medium-low, cover, and simmer for 15 minutes, or until the carrots and cabbage are nice and tender. Then taste and season the soup with a few generous pinches of salt as needed. Serve warm, garnished with green onions and wonton strips or other desired toppings. **I prefer to always use unsalted products and add in salt later. This is to avoid items being too salty. So I used unsalted chicken stock and low sodium soy sauce** **The green onions and wonton strips are used as garnish and are optional, however, I TOTALLY think they make the dish, so don't think they're optional and get them!** **I found the wonton strips by the salad dressings and toppings. ** **Feel free to use other meat as a substitute for the pork, and add in any veggies you would like! ** **It's best if you let the soup sit a few hours to let all the flavors come together.** Do you have a favorite soup recipe?
