White Chocolate Cranberry Cookies are a delightfully soft and chewy cookie made with dried cranberries and white chocolate chips. With crisp chewy edges, a soft fluffy middle, and bursting with delicious flavors in every bite! Everyone will love this winter holiday cookie year round! These are the days. The sun is peaking through and even though it’s February, it’s feeling like Spring. That’s New Orleans for ya! A surprise every time you walk out your front door. I love it though. More often than not, we are met with a heatwave, and warmth is what I love! However, there is something about the holidays and cold winter days that makes me sometimes want them to stay around a bit longer. The cookies kinda help with those holiday blues! White chocolate and cranberries just scream Christmas and all the holiday fun, but I personally think they could and should be a year-round cookie. Why save all the deliciousness for only a few weeks of the year?! Want a cake instead of cookies? Try my White Chocolate Cranberry Bundt Cake! I love that this cookie recipe is made with dried cranberries which makes it a plus for my all year round cookie movement! haha Ok, I digress. Let’s just examine these babies a little further. These cookies have a similar chewiness to the oatmeal raisin cookie which is a favorite in our household. Not overly sweet but so comforting. It’s like the cookie not only hugs your heart and stomach but hugs your soul. Comfort foods are my favorite and I’m so happy to add another cookie recipe to that list! The white chocolate chips provide sweetness but not overly sweet, which is why I only add 3/4 cup instead of a full cup like the dried cranberries. It provides just enough balance to the smooth creamy white chocolate to the chewy dried cranberries and the softness of the cookie. Ok, I’ll stop rambling so you can go make these babies! 🙂 A delightfully soft and chewy cookie made with dried cranberries and white chocolate chips. With crisp chewy edges, a soft fluffy middle, and bursting with delicious flavors in every bite! Everyone will love this winter holiday cookie year round! Preheat oven to 350F. Line baking sheet with parchment paper and set aside. In a large bowl, beat slightly melted butter and both sugars until smooth. Add in egg, vanilla and cream. Beat in flour, salt, baking powder, and baking soda until combined. Stir in cranberries and white chocolate chips. Scoop 1 tablespoon of dough onto baking pan about 1.5in apart. Bake for 10-12 minutes. Remove from heat and allow to cool on baking pan for 3-5 minutes before moving on to cooling rack. Need more delicious recipes? Go here Want to spice up date night?
