A creamy dreamy cupcake bursting with strawberry flavor. This Strawberries N Cream Cupcake starts with a simple vanilla cupcake with a cream filling and strawberry buttercream icing. A fantastic little dessert for all strawberry lovers. I always look forward to strawberry season. I just can’t get enough of those sweet berries. I love just eating strawberries by themselves, but who can resist adding them to a dessert? They just go together swimmingly. (Does anyone even use that word anymore?… well it’s not making a comeback!) Similar to a strawberry shortcake but a little less whip creamy and more strawberry dreamy, except I did use Cool Whip. Who can resist dipping some strawberries into some Cool Whip or homemade whipped cream?! Well besides covering it in chocolate, you really can’t go wrong! We always see desserts with chocolate and strawberry, especially Valentine’s Day desserts. But this dessert stands out on its own. It’s romantic in its own way. Let’s face it, strawberry takes the cake. Speaking of cake, let’s start with the cupcake. Some dessert just needs something simple to pull the whole taste together. This cupcake is a very simple vanilla cupcake. Sometimes simple is just what a dessert needs. Just cream together some butter and sugar. Add in an egg and some vanilla extract. Then add in sour cream and mix together. It might seem weird but sour cream adds a great touch of moisture to the cake and a surprisingly good match to our flavor. Then slowly add the dry ingredients (flour, baking powder, salt) to the wet ingredients. Last, add in that touch of water to thin out the batter just a bit. Scoop the batter into the cupcake pan lined with cupcake wrappers and pop them into the pre-heated oven (350F) for 15-17 mins or until a toothpick comes out clean. Allow to cool. While we wait for the cupcakes to cool a bit, its time to make the filling. First, we need to make a strawberry puree from fresh strawberries. Fresh is always best. It will be incorporated into the filling and the buttercream to give them both a nice strawberry flavor. In a small saucepan, combine granulated sugar, diced strawberries, and stir. Keep on medium to high heat until it comes to a boil, stirring frequently. Once it reaches a boil, lower heat to allow the mixture to simmer and add in lemon juice, mix well. Allow to simmer for 10 mins, stirring occasionally. You’ll see the strawberries break down. After 10 minutes, strain through a sieve into a bowl. Allow mixture to cool. You can make this at the beginning and pop it into the fridge to make sure it is cool by the time you use it. It doesn’t need to be cold, but it shouldn’t be warm. While the puree is cooling, beat together Cool Whip and cream cheese until smooth. Next, we make the strawberry cream filling. Add in strawberry puree and combine. Last add in powdered sugar. some chopped strawberries and you got yourself a delicious filling. Last we make a strawberry buttercream to finish off the strawberry cream flavor. Not overpowering but provides just the right amount of sweetness to these strawberries n cream cupcakes. Beat the softened butter until creamy, then add powdered sugar, one cup at a time, mixing well in between. After 2 cups, add in the strawberry puree. Then add in the last of the powdered sugar. Taste test because that’s the best part of the process! Some like to add just a pinch of salt to balance the sweetness, others like their frosting a bit more creamy and add milk or heavy cream. I like to add some milk or cream. The icing can be stiff and this provides some smoothness to it while still keeping its form. Both are optional. Now that everything has cooled, it’s time to assemble the cupcake. Use a cupcake corer or apple corer and scoop some of the cupcake out the middle. Add a small spoonful of the filling. At this point, you can add a few bits of diced strawberries into the filling for an extra fresh strawberries n cream taste. Then, using a piping bag and a 2D tip, swirl the strawberry buttercream on top and then add a small strawberry to complete the look! You can so use sprinkles if you’re feeling super fancy or if you have any extra strawberry puree, you can drizzle it on top. 🙂 These amazing cupcakes starts with a simple yet tasty vanilla cupcake filled with a whip cream and strawberries topped with sweet strawberry buttercream. Preheat oven to 350F. Grease cupcake pan or add cupcake liners and set aside. 15-17 mins Mix together softened butter and sugar until fully incorporated. Add in egg and vanilla and combine. Next, add sour cream. Finally, add all the dry ingredients. (flour, baking powder, salt) Combine before adding water. Scoop cupcake batter into the pan and fill cupcake 3/4 full. Bake for 15-17 minutes or until toothpick comes out clean. Let sit a few minutes before taking cupcakes out and putting them on a cooling rack. To make puree: in a small saucepan, combine 1 cup diced strawberries, 1/2 granulated sugar. Allow the mixture to start to boil and then add 1/2 tbsp of lemon juice. Turn down heat to allow to simmer for 10 minutes, occasionally stirring. Strain through sieve and allow mixture to cool. You should be left with about 1/3 cup of strawberry puree. In a medium size bowl, combine Cool Whip and cream cheese. Then add in 1 tbsp of strawberry puree and beat. Last add a little bit of powdered sugar. Beat until fluffy and smooth softened butter. Add in powdered sugar 1 cup at a time. After 2 cups add in rest of the strawberry puree. Add in the last of the powdered sugar and milk. Need more delicious recipes?
