These Twix thumbprint cookies are like… WHOA! A soft shortbread cookie, topped with salted caramel and drizzled with chocolate ganache. If you’ve explored any further than this page, you know I love to bake. And right now, it’s been all about cookies. With a volleyball team named the Cookie Monsters, there’s no way of getting around not having cookies. So I’ve been creating a variety different cookies for them. (Bribery at its finest, but secretly I love it because I get to be creative). And holy schnikes, do these make a statement. They all look forward to what new cookie I come with, and their eyes definitley perked up to try these. But I don’t think they were expecting them to taste exactly like a Twix. Their little faces of delight is what I live for! I love that these are small, but that doesn’t help you eat any less! The soft shortbread cookie is so easy to make and practically melts in your mouth. The salted caramel filling makes such a statement in this cookie. It adds just the right amount of salt to keep the cookie from being overly sweet, and the chocolate drizzle to top it all off. **Sigh** Just heavenly. A soft shortbread cookie topped with caramel and chocolate ganache drizzled over the top. In a medium bowl, melt butter (approx. 30 seconds in the microwave) until its mostly melted. Add in sugar and combine. Add in egg yolk and vanilla and stir. Slowly incorporate flour until fully mixed. For instruction on making caramel filling: go here. Or you can use Smuckers Caramel Topping In a small bowl, heat heavy whipping cream till boils. Then remove from heat and add in chocolate. Stir until smooth. Heat oven to 350F. Line cookie pan with parchment paper. Roll about a tbsp of cookie dough into a ball and place onto cookie sheet. Using your thumb, push down into the middle of the ball. Bake for 8-10 minutes or until edges start to brown. Allow cookies to cool. Add caramel into thumbprint indention. Then using a piping bag, sandwich bag or a spoon, drizzle chocolate across the top of the cookie. Let cookies and chocolate to set for about 10 mins before removing from pan. Enjoy!
