A soft, buttery scones filled with chai spices and sweet pear chunks. A fluffy breakfast scone that is ridiculously easy to make and perfect for an afternoon tea or dessert. I just recently got into chai things. Although, I’ve had chai teas a few times in my life, and I always said I wanted to drink them more, I never did. Until I went to Starbucks the other day and had there vanilla chai latte, and this latte gave me life! I dreamed about that creamy dreamy deliciousness for weeks until I got it again. Unfortunately, it just wasnt the same and made me wish I remember who made the first one! So I set out to make my own recipe. I tried and tweaked and make a recipe I love! And Guess what? It costs less than 50 cents to make each time…. booya! So, now I’m surrounded by chai and I LOVE IT! Back to these beauties. Pear just happens to be my favorite fruit. I’ve been wanting to make something with them for awhile now, and I knew spices would have to be included. When I think of chai tea, I think of tea parties and things you have at tea parties. This is how this scones recipes was formed. I’m not a big fan of the more dry, hard scones. I like soft, fluffy, full of flavor scones with the similar texture of a biscuit. This. This is it. Oh man, it’s good! I honestly thought scones required yeast for being so fluffy, but I was wrong, and I’m happy about that! I have no patience in waiting for yeast to do its magic for bread to rise. I like recipes that don’t require long breaks in between, so I was excited to find scones don’t require yeast. I thought it would be way more work than it was, so I was pleasantly surprised at how easy it is to make these pear chai scones. This recipe goes against most recipes you’ll make in your lifetime, but just go with it. First, combine all the dry ingredients in a large bowl (flour, cinnamon, nutmeg, ground ginger, baking powder, salt). Next, add chunks of butter. This is one time you do not want to melt your butter. You want it cold but try to break it into small chunks using a pastry blender or your fingers. You want these chunks to be fairly small like the size of a pea. In a separate bowl or just a measuring cup, mix together the buttermilk and vanilla extract. Slowly add the buttermilk mixture to the dry ingredients. You may not need all the buttermilk, just enough to make everything moist, not wet. Add in diced pear chunks and mix together just enough until it is fully combined. You don’t want to over mix these as they will become tough. Transfer to parchment paper with a little sprinkle of flour. Knead the dough 4-6 times and form it into a circle. Then cut the scones into pizza-like slices. Start by making a plus size and then cut in between those lines. Put them into the freezer for 30 mins to firm. Preheat oven to 400F. Take the scones out of the freezer and space them 2 inches apart. Brush the tops with egg wash. This will help give them a crisp golden brown top. Bake for 15-20 minutes. Allow them to sit on the pan for 5 minutes before transferring to a cooling rack. While they are cooling, combine confectioners sugar, cinnamon and heavy cream together in a small bowl. Pour over pear chai scones and enjoy! These scones won’t last long, but if you happen to save some, place in an airtight container for no more than 5 days. You can also freeze dough in an airtight container to make another day before baking them. This utterly delicious chai pear scone is super soft on the inside with crisp edges on the outside. Filled with juicy pears and chai making this a wonderful breakfast combination. Combine all dry ingredients: flour, sugar, baking powder, salt, cinnamon, nutmeg, ginger. Sift or mix together throughly. Add chunks of cold butter. Use pastry blender or fingers to break butter up into pea sized chunks into the dry mixture. In a small bowl or measuring cup, mix together buttermilk and vanilla extract. Slowly add in buttermilk to dry ingredients, as you may not need all the buttermilk. (You only want ingredients to be moist, but not too wet.) Add in diced pear chunks. Don't overmix as they may become tough. Transfer dough to pan lined with parchment paper and lightly sprinkled with flour. Gently knead dough 4-6 times and shape into a circle. Cut circle in half and then cut like a pizza until you have 8 triangle shaped pieces. Freeze for 30 mins. Heat oven to 400F. Space triangles out 2 inches apart and brush with egg wash. This will help give it a golden color while baking. Bake for 15-20 minutes until golden brown. Remove from heat and then transfer to cooling rack after 2-3 minutes. Combine all the ingredients (confectioner's sugar, cinnamon, heavy cream) for the glaze in a small bowl and whisk until smooth. Want more delicious recipes? Go here Looking to spice up date night?
