Apple Pie Cookies

These apple pie cookies are a delicious alternative for southern comfort goodness. The warm homemade cinnamon apple filling baked into a crispy crust. A delicious piece of pie in a cookie.

Ingredients

  • 1 box pie crust
  • 1/2 cup caramel sauce
  • 1 cup apple pie filling
  • 1 tbsp cinnamon sugar
  • egg wash

Apple Pie Filling

  • 3 apples peeled, diced
  • 1/3 cup corn starch
  • 1 tsp ground cinnamon
  • 3 cups water
  • 1 tbsp lemon juice
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 1/3 cup granulated sugar

Instructions

Apple Pie Filling - If you are cooking your own.

  1. Peel, dice and core the apple. Add in lemon juice to coat them and set aside. 

  2. In a medium saucepan, add water, sugar, cornstarch, cinnamon, nutmeg and salt.  Stir together. 

  3. Over medium heat, continue stirring frequently until it comes to a boil. 

  4. Add in apples, turn to a simmer, and cover. Keep stirring often, until the apples soften, about 5-10 minutes.

  5. Allow to cool before using in cookies. 

Making the Cookies

  1. Heat oven to 350F.  Line cookie sheet with parchment paper. or use baking mat. 

  2. On a baking mat or cookie sheet, add a light dusting of flour. Roll out pie crust on mat. A thin coating of caramel sauce to the crust.

  3. Add thin layer of apple filling on top. 

  4. On a separate mat, dust with flour and roll out the other pie crust. Using a pizza cutter, cut pie crust into thin strips 

  5. Start by making a cross in the middle of the pie. Then add a strip vertical to each side of the first strip.

  6. Alternate the strips over and under. Then do the same for horizontal. Add one strip to each side of the horizontal line and weave them in and out.

  7. Keep repeating this process until you've covered the whole pie. Brust with egg wash and sprinkles top with cinnamon sugar.

  8. Bake in the oven for 20-25 minutes.

  9. Allow to cool for 5-10 min before using circle cookie cutter to make them into cookies. 

  10. Try to put circles as close as you can to get the most cookies. Makes about 12 cookies. Don't forget to eat the delicious scraps. 

Recipe Notes

**You can slice or dice your apples, I just find diced worked better with the cookies. **

**I used a baking mat that can go into the oven. If you don't have one, you can use the cookie sheet with parchment paper and start there. **
