One-Pan Sausage and Vegetables

The one pan meal is packed with protein and veggies for a delicious healthy nutritious meal.

  • 5 tbsp olive oil
  • 1 small onion
  • 1 lb turkey sausage or your preferred sausage
  • 1 red pepper
  • 1 orange pepper
  • 1 yellow pepper
  • 1 sweet potato
  • 3 red potatoes
  • 1 bag green beans defrosted, drained
  • 1 bag broccoli defrosted, drained
  • 1 tbsp Italian seasoning
  • 1/2 tbsp garlic powder
  • 1/2 tbsp thyme
  • salt optional
  • pepper optional


  1. Heat oven to 400 degrees F.  

  2. Lay foil down on the pan for easy cleanup. Spray with cooking spray. 

  3. Chop sausage and your desired veggies and lay them out on a greased pan. If you use potatoes as well, be sure to cut them into small chunks so that cook evenly with all the other items. 

  4. Drizzle oil, and seasonings on top.

  5. Cook for 15 mins, and then toss them to cook them evenly. Return to the oven for another 15 mins. 

  6. Eat as is, or add to rice, quinoa, pasta or mashed potatoes.
