A soft chocolate chip cookie with candied smoky bacon mixed in for a delicious balance of salty and sweet.
Heat oven to 350F.
On a pan, covered in foil and sprayed with cooking spray. Lay bacon on the pan. Sprinkle brown sugar on top of the bacon.
Bake bacon in oven for 20 minutes or until crispy. Flip the over after 10 minutes.
In a bowl, add melted butter and both sugars to the bowl and mix together until all incorporated.
Add in eggs one at a time and beat together. Then add vanilla extract and salt
Dissolve baking soda in hot water and then add to batter along with baking powder.
Add flour in one cup at a time and mix until combined.
Stir in bacon pieces and chocolate chips. Make sure bacon is cooled before adding
Brown sugar for bacon is an estimate as I just did enough to cover my strips of bacon.
