These carrot cake whoopie pies are all the flavors of a carrot cake in a cookie. These whoopie pies are filled with carrots, oatmeal, and a few raisins sandwiched around a tasty cream cheese frosting.
In a medium size bowl, mix dry ingredients (flour, salt, baking powder, baking soda, oatmeal, ground cinnamon, ground nutmeg) Set aside.
In large bowl, mix together slightly melted butter and both sugars (brown and granulated) until smooth.
Add eggs one at a time combining ingredients completely. Add in vanilla.
Slowly add dry ingredients to wet ingredients until combined.
Mix in grated carrots, and then fold in raisins. Place in fridge for 1 hour.
Preheat oven to 350F. Line baking pans with parchment paper. Add a tablespoon of dough on baking sheet. Bake for 10-12 mins or until edges start to golden.
Cream soft butter and cream cheese. Add in powdered sugar one cup at a time. Add in vanilla.
Spoon icing into piping bag. Add frosting into onto bottom of one cookie and add another cookie on top. Enjoy!
