A great summer cookie or a fun festive green for St. Patrick's Day! This light refreshing cookie looks just like mint chocolate chip ice cream and tastes like it too!
Preheat oven to 350F and line baking pan with parchment paper.
In a large bowl, cream butter and sugars together.
Add in egg, vanilla, and peppermint extract.
Mix in flour, baking powder, and salt.
Add in drops of green food coloring. Add more or less for your desired color.
Stir in chocolate chips.
Add a tablespoon of cookie dough to baking pan about 2 inches apart from each other.
Bake for 10-12 mins. Let cookies cool for 5 mins before transferring them to cooling rack.
For best results, chill dough for 2 hours before baking.
