Stuffed Pepper Soup

  • 1 tbsp olive oil
  • 1 1/2 tsp minced garlic
  • 2 green bell pepper chopped
  • 1 red bell pepper chopped
  • 1/2 lb sausage
  • 1 1/2 lb ground turkey or beef
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 28 oz tomato sauce
  • 1 28 oz diced tomatoes
  • 6 cups beef broth unsalted or reduced-sodium
  • 2 cups cooked white or brown rice
  • salt and pepper to taste
  • 2 tbsp fresh parsley chopped


  1. In a large pot, heat 1 tbsp of olive oil over medium heat.

  2. Add in ground turkey (or ground beef) and ground sausage. Cook until brown.

  3. Add in garlic, peppers, and onions and cook until onions are translucent. Stirring frequently.

  4. Pour in diced tomatoes, tomato sauce, and beef broth. Mix well.

  5. Add in seasonings ( Italian seasoning, salt and pepper)

  6. Bring to boil and then reduce heat to low and allow to simmer covered for 25-30 minutes, stirring occasionally.

  7. While soup simmers, prepare rice according to directions listed on package.

  8. Once soup is done simmering stir in the desired amount of cooked rice into soup and add parsley.

  9. Serve warm topped with optional cheese and garnish with fresh parsley.
