Blueberry Baked Oatmeal Cups

A quick healthy on the go breakfast that you can make ahead of time to have all week. They are gluten free and easy to meal prep making this your go to breakfast.

  • 3 cups old fashioned oats
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/3 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup blueberries
  • protein powder optional


  1. Pre-heat oven to 350F. Use cupcake liners or grease your pan and set aside.

  2. In a medium bowl, add dry ingredients. (oats, brown sugar, ground cinnamon, baking powder, salt) whisk to combine.

  3. Add milk, eggs, maple syrup, and vanilla extract and whisk or stir to combine.

  4. Add blueberries. Be gentle when stirring or whisking until mixed.

  5. Bake for 22-27 minutes until toothpick comes out clean.

Recipe Notes

These freeze well and reheat beautifully so you can make them in bulk. . Freeze for up to 3 months. 

Use your milk of choice.
